POSITION SUMMARY: Responsible for the successful culinary production operation under the direction of the Executive Chef, assists in developing menus, food purchase specifications and recipes. He also directly supervises all production and gardemange staff and conducts regular physical inventories of food supplies and completes work schedules for the kitchen personnel. The candidate should maintain highest professional food quality, sanitation standards and cost controls and to promote superior quality service according to Westin/Columbia Sussex standards. Ensures proper selection, training, counseling and motivation of all team members.
